Summertime Delight: Italian Flat White Peach and Mozzarella Salad Recipe for July

Indulge in the delectable flavours of summer with Italian Flat White Peaches, in season during the sunny month of July. Bursting with sweetness and juiciness, these luscious peaches offer a tantalising twist on traditional varieties. Their smooth, creamy white flesh boasts a delicate aroma and a delightful balance of tartness and natural sweetness.

Ingredients (serves 4):

  • 2 Italian flat white peaches

  • 225 grams of fresh mozzarella cheese

  • 30 grams mizuna micro herb

  • 30 grams amaranth micro herb

  • 90 grams fresh rocket

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

  • 50 grams toasted walnut pieces

Instructions:

  1. Begin by washing the peaches thoroughly. Slice them into thin wedges and set aside.

  2. Drain the mozzarella cheese and rip it into bite-sized chunks.

  3. In a large salad bowl, combine the mizuna, amaranth and rocket leaves.

  4. Add the sliced peaches and mozzarella cheese to the bowl.

  5. Drizzle the extra virgin olive oil and lemon juice over the salad.

  6. Season with salt and pepper to taste.

  7. Gently toss all the ingredients together until well combined.

  8. Allow the salad to sit for a few minutes to let the flavours meld together.

  9. Sprinkle with the toasted walnut pieces.
