Irresistible Chicken Satay Skewers

These Chicken Satay Skewers are packed with flavour and served with a creamy peanut sauce—perfect for an appetiser, BBQ, or light meal!

Chicken Satay Skewers

Ingredients:

Serves 4

For the chicken:

  • 500g chicken breast or thigh, cut into thin strips

  • 2 tbsp soy sauce

  • 1 tbsp rapeseed oil

  • 1 tbsp honey

  • 1 tsp turmeric

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp garlic paste

  • 1 tsp grated ginger

  • 1 tsp salt

  • 1 tsp fine pepper

  • Juice of 1/2 lime

  • Wooden skewers, soaked in water

For the peanut satay sauce:

  • 3 tbsp peanut butter (smooth or crunchy)

  • 1 tbsp soy sauce

  • 1 tsp garlic paste

  • 1 tsp grated ginger

  • 120ml coconut milk

  • Juice of 1/2 lime

  • Salt & pepper to taste

  • 1 tbsp water (if needed, to loosen)

Method:

  1. Marinate the chicken:

    • In a bowl, mix soy sauce, rapeseed oil, honey, turmeric, coriander, cumin, garlic, ginger, salt & pepper, and lime juice.

    • Add chicken strips and coat well. Cover and marinate in the fridge for around 30 minutes.

  2. Prepare the skewers:

    • Thread the marinated chicken onto soaked wooden skewers.

  3. Cook the skewers:

    • Heat a pan or BBQ over medium heat. Lightly oil the surface.

    • Cook the skewers for 3–4 minutes per side until golden brown and cooked through (internal temperature 75°C.

  4. Make the peanut satay sauce:

    • In a small saucepan over low heat, combine peanut butter, soy sauce, garlic, ginger, coconut milk, salt & pepper, and lime juice.

    • Stir until smooth and heated through. If too thick, add a splash of water to loosen.

  5. Serve:

    • Plate the chicken skewers and drizzle with some satay sauce, serving the rest on the side.

    • Garnish with chopped peanuts, coriander, spring onion, and an extra lime wedge if desired.
