Irresistible Chicken Satay Skewers
These Chicken Satay Skewers are packed with flavour and served with a creamy peanut sauce—perfect for an appetiser, BBQ, or light meal!
Chicken Satay Skewers
Ingredients:
Serves 4
For the chicken:
500g chicken breast or thigh, cut into thin strips
2 tbsp soy sauce
1 tbsp rapeseed oil
1 tbsp honey
1 tsp turmeric
1 tsp ground coriander
1 tsp ground cumin
1 tsp garlic paste
1 tsp grated ginger
1 tsp salt
1 tsp fine pepper
Juice of 1/2 lime
Wooden skewers, soaked in water
For the peanut satay sauce:
3 tbsp peanut butter (smooth or crunchy)
1 tbsp soy sauce
1 tsp garlic paste
1 tsp grated ginger
120ml coconut milk
Juice of 1/2 lime
Salt & pepper to taste
1 tbsp water (if needed, to loosen)
Method:
Marinate the chicken:
In a bowl, mix soy sauce, rapeseed oil, honey, turmeric, coriander, cumin, garlic, ginger, salt & pepper, and lime juice.
Add chicken strips and coat well. Cover and marinate in the fridge for around 30 minutes.
Prepare the skewers:
Thread the marinated chicken onto soaked wooden skewers.
Cook the skewers:
Heat a pan or BBQ over medium heat. Lightly oil the surface.
Cook the skewers for 3–4 minutes per side until golden brown and cooked through (internal temperature 75°C.
Make the peanut satay sauce:
In a small saucepan over low heat, combine peanut butter, soy sauce, garlic, ginger, coconut milk, salt & pepper, and lime juice.
Stir until smooth and heated through. If too thick, add a splash of water to loosen.
Serve:
Plate the chicken skewers and drizzle with some satay sauce, serving the rest on the side.
Garnish with chopped peanuts, coriander, spring onion, and an extra lime wedge if desired.
